Its cookie time with these awesome Chocolate Chip Fibre Cookies. Packed with chocolatey goodness, they are perfect with a glass of Horchata, to keep that sweet tooth at bay or just as a quick snack to munch on inbetween meals.

 80 g Chufa Fibre (leftover pulp from Horchata de Chufa)
 120 g Ground Almonds
 40 g Xylitol
 30 g Dark Chocolate Chips
 20 g Ground Linseeds
 2 Large Egg Whites (or 3 small)
 1 tsp Vanilla Bean Paste

Pre-heat the oven to 180˚c.

Mix the pulp and the ground almonds together.

Add the sugar and egg whites to the mixture and mix well.

Add the Vanilla and the ground linseeds and mix.

Shape the mixture into little round biscuits on the silicone mat and place into the oven. Bake for 15 minutes, until golden-brown.

The biscuits are soft by nature and should be chewy.
