For us, this recipe marks where our Chufa journey started and how integral Chufas have become to our daily lives. It's perfect for breakfast, in smoothies, shakes, and as a base in other recipes.

 200 g Soaked Chufas ideally overnight
 1 ltr Cold filtered water

Pour the filtered water into the clear container

Fit the filter inside the container and click into place

Drain the soaked Chufas and place the Chufas inside the filter ****

Put the hand blender inside the filter and blend in an upwards and downwards motion for 1 minute or until there is no more crackling (noise of chufas being broken down- see video below).

Lift the filter and using the mortar in the filter gently press down to squeeze out any remaining Horchata.

Using a wooden spoon or plastic spatula scoop out the fibre pulp left in the filter and place aside. (For recipes on how to use The Chufa Fibre Pulp see link in NOTES below).

Place the lid on the container of Horchata de Chufa and place in the fridge for the flavours to develop for 10 minutes minimum, but it can also be left longer if that’s how you like it.

Store between 2°C - 4°C. Stir before serving. Best served chilled.
